Baked Puffed Pancake

Wow...YUM! I made this this morning for breakfast and it's the first 'postable' recipe I've come across in a while so I thought I'd share :) It was so easy to make and came out of the oven BEAUTIFUL...it puffed up the edges of the pan and browned perfectly...and it was delicious!!

Baked Puffed Pancake
4 eggs
1 cup milk
1 teaspoon vanilla
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup flour
1/2 cup (1 stick) butter
Confectioner's sugar, for garnish

Preheat oven to 425 degrees. In a medium bowl beat eggs until frothy; add milk, vanilla, nutmeg, and salt. Whisk until combined. Gradually whisk in flour and stir until smooth. Place butter in 13 x 9-inch glass baking pan and place in oven until pan is hot and butter is melted. Remove from oven and pour batter into hot pan. Bake 22 minutes. Immediately cut pancake into squares and serve dusted with confectioners' sugar and warm syrup.

Yield: twelve 4 x 6-inch squares
